The three main healthy ingredients in this recipe are chickpeas, almond butter, and oats. Let’s talk about each ingredient and how we are reaping certain health benefits from this cookie dough recipe.
Chickpeas contribute a good amount of plant protein to this recipe, containing 3 grams of protein per ounce of chickpeas. Meaning, this chickpea cookie dough will support muscle recovery, keep your satisfied a bit longer than other snacks, and support your tissues and organs.
Chickpeas also contain fiber, which benefits your digestive health. They’ll promote healthy bacteria in your gut and prevent unhealthy bacteria that could lead to serious health consequences.

What You Need To Make Chickpea Cookie Dough
- Blender or Food Processor
- Almond Butter
- Coconut Sugar
- Almond or Coconut Milk
- Baking Soda
- Dairy-Free Mini Chocolate Chips (my favorite brand here)
How To Make Chickpea Cookie Dough
First, blend the oats for 1-2 minutes so it resembles flour.
Combine all of the ingredients except the mini chocolate chips in a food processor or blender. Process these ingredients until they are completely blended and smooth.
Make sure to scrape down the sides so everything is blended.
Then, place the cookie dough mixture into a bowl and fold in the mini chocolate chips.
Serve with graham crackers, pretzels, or fruit (or by the spoonful) and refrigerate any leftovers.
Chickpea Cookie Dough
- Food Processor or Blender
- ½ cup oats
- 1 can chickpeas rinsed and drained
- ½ cup creamy almond butter
- ½ cup coconut sugar
- ¼ cup dairy-free milk coconut or almond works well
- ⅛ tsp salt to taste
- ⅛ tsp baking soda
- ⅓ cup dairy-free chocolate chips
- Add the rolled oats to the food processor or blender and blend until it resembles flour.
- Combine all of the ingredients except the chocolate chips in a food processor. Process the ingredients until they are completely blended and smooth.
- Scrape the dough mixture into a bowl, and fold in the chocolate chips.
- Enjoy with graham crackers, pretzels, or fruit. Refrigerate any leftovers.
