Ingredients

cooked quinoa
1
can
14 oz chickpeas (garbanzo beans), drained and rinsed

cups
grape tomatoes
sliced in half or quartered
1
medium cucumber
diced
½
red onion
diced
1
jar green olives
about 2 cups, pitted and sliced
½
cup
sun-dried tomatoes
not packed in oil
½
cup
loosely packed fresh parsley
chopped
¼
cup
fresh dill
chopped
Salt and pepper
to taste
juice of 1 large lemon or 2 Tbsp lemon juice
drizzle of extra virgin olive oil
optional
peperoncini
to serve
Instructions
In a large bowl, add the chickpeas, tomatoes, sun-dried tomatoes, cucumber, onion, and olives to the quinoa. Mix well.
Add the fresh parsley and dill. Mix well.
Season with salt, pepper and the juice of 1 large lemon.
