Burrito Bowl With Cilantro Lime Rice, Sofritas, And Fajita Veggies
This copycat Chipotle burrito bowl is going to be your new staple meal. This dish is easy, healthy, simple, vegetarian and/or vegan, versatile, and delicious!
Make your sofritas and cilantro-lime rice first according to their recipe.
Fajita veggies:
On a medium-size pan over medium heat, add a tablespoon of olive oil (or use water when the veggies start to stick). Add the sliced onions and bell peppers and saute until they become soft (about 8 minutes). Take off heat and add the taco seasoning, stirring well to combine. Set aside.
Heat the pinto or black beans over low-to-medium heat in a small pan for 6-8 minutes OR in a microwave-save bowl in the microwave for about 3 minutes.
To serve for two, add the cilantro-lime rice to your bowls, then the sofritas and fajita veggies. Next, add your beans and top with your choice of salsa, lettuce, avocado, adobo sauce, fresh cilantro, lime juice, vegan shredded cheese and vegan sour cream.
