Vegan Burrito Bowl With Cilantro Lime Rice, Sofritas, And Fajita Veggies (Chipotle Copycat)

This copycat Chipotle burrito bowl is going to be your new staple meal. This dish is easy, healthy, simple, vegetarian and/or vegan, versatile, and delicious!

Copycat recipes are best when you have a certain dish from a restaurant you truly love, only to find out it doesn’t fit in with your dietary preferences. This was the dilemma I had with chipotle burrito bowls. Sure, I could leave out some ingredients and make substitutions, but then I feel as though I’m not getting my money’s worth from the burrito bowl (and it honestly just didn’t taste as good). 

So why not just make my own burrito bowl? It’s more affordable, I can change it up based on my tastes, and I don’t have to worry about what else might be in it.

When going for simple and healthy meals, burrito bowls are a must. All you need to do is add rice, beans, protein, veggies, and sauce and your burrito bowl will be drool-worthy.

Are Chipotle Pinto Beans Vegetarian? 

Good news, Chipotle pinto beans are completely vegetarian AND vegan! Their black beans are also vegan. This means that if you were worried they may contain lard or other animal products, you can rest assured they do not. 

What Is A Burrito Bowl?

When going for simple and healthy meals, burrito bowls are a must. Burrito bowls are simply deconstructed burritos. So take all the burrito fillings you know and love, and put them over salad or rice to enjoy!

All you need to do to make a drool-worthy burrito bowl is add rice, beans, a protein, veggies, and sauce. I like to add guacamole, vegan sour cream, and some form of spicy sauce or salsa to top the bowl off (like chipotle adobo sauce, corn salsa, pico de gallo, or creamy avocado sauce). 

How To Make A Burrito Bowl Vegan

Normally, burrito bowls can contain lard in the pinto beans, meat as the protein, plus cheese and sour cream on top. In order to make your burrito bowl vegan, there are a number of substitutions you can make that don’t sacrifice taste or texture!

First, make a batch of sofritas to have on hand as your protein. You want to have cilantro lime rice or brown rice on the bottom of your bowl (plus lettuce if you want to make it a salad), then add yummy fajita veggies, sofritas, and fat-free pinto or black beans. Then, add any salsas or sauces you desire and top with a little vegan sour cream or my famous chipotle adobo sauce.

  • 1 Small pan or Microwave-safe bowl

INGREDIENTS  

2 servings Cilantro lime rice (or just brown rice)

2 servings Sofritas

  • Olive Oil (optional)
  • 2 Bell Peppers (red and yellow ar
  • 1 Yellow Onion 
  • Packet Low-Sodium Taco Seasoning
  • 1 can Pinto Beans or Black Beans

Optional Toppings (use what you like):

  • Pico de gallo or corn salsa
  • Romaine lettuce
  • Diced avocado or guacamole
  • Cashew adobo sauce
  • Fresh cilantro
  • Fresh lime juice
  • Vegan shredded cheese
  • Vegan sour cream

How To Make Vegan Chipotle Burrito Bowls

Make your sofritas and cilantro-lime rice first according to their recipe.

Fajita Veggies

On a medium-size pan over medium heat, add a tablespoon of olive oil (or use water when the veggies start to stick). Add the sliced onions and bell peppers and saute until they become soft (about 8 minutes). Take off heat and add the taco seasoning, stirring well to combine. Set aside.

Beans

Heat the pinto or black beans over low-to-medium heat in a small pan for 6-8 minutes OR in a microwave-save bowl in the microwave for about 3 minutes.

To Serve For Two

Add the cilantro-lime rice to your bowls, then the sofritas and fajita veggies. Next, add your beans and top with your choice of salsa, lettuce, avocado, adobo sauce, fresh cilantro, lime juice, vegan shredded cheese, and vegan sour cream

    How Do You Meal Prep Chipotle Burrito Bowls? 

    Meal prepping these burrito bowls is very simple! First, cook the pinto beans, the rice, sofritas, and the fajita veggies the night before, then store them in separate containers. You can also make your salsa and/or cashew adobo sauce the night before and store in airtight containers. Then prep any toppings that require chopping (like lettuce and cilantro) and store them in individual containers. When you’re ready to serve, just combine everything and enjoy!

    How To Store And Keep Leftovers

    The key to storing leftovers is keeping the burrito bowl ingredients separated until you’re ready to eat. Then, simply add your portion to a bowl and continue saving the leftovers in their separate airtight containers. You can store everything in the fridge for 3-4 days. 

    Just reheat the beans, rice, sofritas, and veggies in the microwave then add your toppings.
