I’ll admit, my husband was the main motivator in publishing this recipe. He is obsessed with this cashew dip! He has always suggested packaging and selling it because it’s just that good. Well, no need to sell it because I’m giving it over to YOU for free (I know, I know... I’m too kind).
But seriously, you need to try this chipotle cashew dip and see if you don’t become as obsessed as my husband is. Enjoy with chips, veggies, potatoes, tacos, and more - it’s so versatile!
The best way to eat it in my opinion is on top of my Chipotle burrito bowl copycat recipe. Cilantro lime rice, sofritas, fajita veggies, and this addicting chipotle dip on top. YUM!

Ways To Eat This Addicting Chipotle Cashew Dip

- Added to tacos, burritos, tostadas, or salads
What You’ll Need For This Recipe
High-powered blender or food processor - This is a necessity to make this dip really smooth, otherwise it comes out a bit chunky.
Roasted, unsalted cashews - You can buy raw cashews and roast them yourself or simply use raw cashews in place (it just doesn’t give it quite the same taste).
Chipotle peppers in adobo sauce - This is a must! I never knew what to use these delicious peppers for until this sauce recipe. Now I can’t imagine not having chipotle peppers in adobo sauce on hand at all times.
Cane or brown sugar - I personally prefer using brown sugar but you can also use cane sugar or even a sugar substitute like monk fruit sweetener or swerve.
How To Make Chipotle Cashew Dip
Soak the cashews for 8-10 hours OR quick-soak them for 10 minutes in boiling water.
Then, add them to a blender or food processor and process until smooth.
Add the rest of your ingredients and process to combine.

Ingredients
- 1 cup roasted unsalted cashews (soaked 8-10 hours in water)
- 2 chipotle peppers in adobo sauce + 1 tablespoon adobo sauce
- 1/2 cup water
- 1/4-1/3 cup cane or brown sugar if you want it more spicy, use less sugar. If you want it sweeter, add sugar
Instructions
- After allowing the cashews to soak for 8-10 hours, add them to a blender or food processor. Process until smooth.
- Add the rest of your ingredients and process to combine.

If you didn’t soak the cashews, you can quick soak them with boiling water for 5-10 minutes.
How To Save And Store This Cashew Dip
You can store your chipotle cashew dip in the fridge in an airtight container for up to 5 days. The oils from the cashews might separate so be sure to stir before eating.
