Can I Make This Recipe Kid-Friendly (Less Spicy)?
Absolutely, you can! This sofritas recipe is perfect for kids, minus the spice. Simply leave out the chipotles and adobo sauce, using 1 tablespoon tomato paste instead.
It won’t taste the same as I think the chipotles and adobo sauce make this recipe 10x tastier, but your kids will probably favor the milder spices more.
What Is Sofritas?
Not to be confused with sofrito - sofritas consists of firm, crumbled tofu cooked on a skillet with smoky chipotle peppers, roasted poblano, tomato, and a blend of spices. It has a slightly spicy, delicious flavor and is perfect for Mexican or tex-mex recipes.
You might have first heard of sofritas by finding it as a vegan option at chipotle. While chipotle did make this vegetarian option more famous, it didn’t originate there.

Vegan sofritas go well with a lot of different foods! Here are some examples:

What You'll Need For This Recipe
Sofritas Sauce
- Extra virgin olive oil
- Poblano pepper
- Chili powder
- Smoked paprika
- Cumin
- Dried oregano
- Minced garlic
- Sea salt or himalayan
- Coconut sugar
- Yellow onion
- Tomato paste
- Chipotle pepper in adobo sauce
- Adobo sauce
Tofu Mixture
- Firm or extra-firm tofu
- Extra virgin olive oil
How To Make Vegan Sofritas Just Like Chipotle
Sofritas Sauce
Arrange an oven rack about 6 inches below the broiler and turn the oven to broil.
Cut the poblano pepper in half lengthwise, and remove and discard the stem and seeds. Place the pepper on a baking sheet, drizzle with 2 teaspoons of olive oil, and toss to coat. Broil until charred all over, flipping halfway through, about 10 minutes total. Cool slightly.
Place all of the sofritas ingredients in a food processor or blender, process until smooth.
Tofu Mixture
Press and drain the tofu for 15 minutes to get rid of the excess water. Heat 1 tbsp olive oil in a large skillet over medium heat. Add the tofu and crumble it using a wooden spoon. cook until golden brown and slightly crispy.
Once the tofu is cooked (about 8-10 min), pour the Sofritas sauce into the skillet and cook on medium/low heat until the flavors combine about 5-10 minutes (adding 1-2 tablespoons water when needed). Serve with your chipotle copycat burrito bowl!

Sofritas Sauce
- 2 tsp extra virgin olive oil
- 1 poblano pepper chopped
- 1 tsp chili powder
- 1 tsp smoked paprika
- 2 tsp cumin
- 1/2 tsp dried oregano
- 2 cloves garlic minced
- 1/2 tsp salt
- more to taste
- 1/2 tsp coconut sugar
- 1/2 yellow onion chopped
- 1 Tbsp tomato paste
- 1 chipotle pepper
- 1 tbsp adobo sauce
- 2 Tbsp water
Tofu Mixture
- 1 16 oz block of firm or extra-firm tofu
- 1 tbsp extra virgin olive oil

Can I Make Sofritas Ahead Of Time?
Yep! Sofritas can be made a day in advance and stored in an airtight container in the refrigerator. You can also drain and crumble the tofu and sauce ahead of time and save them separately in airtight containers in the fridge. Then when you’re ready to make it, add the tofu to the pan to saute, and then add the sauce according to the recipe instructions.
How To Save And Store Leftovers
Leftovers will keep in an airtight container in the refrigerator for up to 4 days. You can also save leftovers in the freezer for up to 2 months in an airtight container or freezer bag. When ready to eat, simply heat in the microwave or in a saucepan over medium heat.
