Chickpea Kale Salad With Lemon Tahini Dressing
Summer is still here, so enjoy this Tahini Kale Salad in the sunshine! Salad is always an easy and refreshing meal this time of year. The best part is, you can make this salad and dressing ahead of time to save for later.
This kale salad is one of my simplest recipes on Planted With Katie with only 7 ingredients. This salad and dressing takes only 10 minutes to put together, is super nutritious and energizing, and will fill you up with fiber and protein for whatever your plans for the day may be.

Tahini Kale Salad Ingredients
- Kale - organic, if you can!
- Garbanzo beans
- Red onion
- Cherry or grape tomatoes
- Tahini - my favorite tahini here.
- Lemon
- Sea salt or himalayan pink salt
How To Make A Tahini Kale Salad
To a food processor or blender, add all the dressing ingredients OR you can whisk the ingredients together in a small bowl.
Next, wash and chop the kale then place in a large bowl. Add the garbanzo beans and cherry or grape tomatoes.
Now you can either add your dressing to the large bowl and mix everything together or serve the salad and dressing separately. Enjoy!
Chickpea Kale Salad With Lemon Tahini Dressing
Equipment
- Salad bowl
- Chipping board
- Kitchen knife
Ingredients
Salad
- 2 bunches kale
- 1 can garbanzo beans
- 1 cup sliced red onion
- 1 cup grape or cherry tomatoes
Dressing
- ½ cup tahini
- Juice of 1 large lemon or 4 Tbsp. lemon juice
- 2 Tbsp. honey or pure maple syrup
- 4-5 Tbsp. water to thin add 1-2 at a time for desired consistency
- Sea salt or himalayan pink salt to taste
Instructions
- To a food processor or blender, add all the dressing ingredients.
- Other method - In a small bowl, whisk together all the dressing ingredients.
- Wash and chop the kale then place in a large bowl. You can also massage and wash some bitterness out of the kale if you'd like.
- Add the garbanzo beans and cherry or grape tomatoes.
- You can either add your dressing to the large bowl and mix everything together or serve the salad and dressing separately. Enjoy!
